Easter!

Happy Easter Everybody!

These are my favourite daffodils, the pale yellow ones near the mailbox in our driveway.

This is the tragedy that has befallen us. When I went out this morning to feed all the animals, there was a gaping hole in the chicken wire of the rabbit run and beautiful Miles Davis was nowhere to be seen! Polly had been barking a lot yesterday. I suspect she was trying to tell us that the rabbit got out, but we only told her to shut up. By the way, Polly is the one who made the hole in the first place. We caught her at it a while ago. I patched up the other hole that she made, but then she went on to make another. Before I discovered this hole, the rabbit had escaped.

It could be that Miles Davis is the true Easter Bunny and he had to get out so he could attend to his Easter duties.

He was a beautiful rabbit and I liked him. I'm mad at the dog for making the holes. Maybe the rabbit isn't dead and he'll come back.

These are today's eggs and the chickens who have produced them.
This is what it looks like when you get four or more eggs a day. They start to stack up. I've already started giving them away to our neighbours who love our eggs.

I hope everybody has a nice, relaxing Easter Sunday because that's what we're having here.

what a pretty egg basket! I hope Miles Davis has enough time to deliver Easter baskets to all the children of Scotland today. Maybe he'll come back afterwards.

I DO hope Miles comes hopping back safely. It would be terribly sad for Easter to be marred by a loss :(
He is just gorgeous with his glossy black coat.

Those eggs just look the right kind for me to make my favourite: soft boiled eggs.
So sorry for Miles Davis! Let's hope he will come back.

I'm pretty sure Miles has to be THE Easter Bunny...why else would he run away just then. Coincidence? I don't think so...

Have you tried 'pickled' eggs?? They are absolutely a wonderful taste.

Some old fashioned pubs still sell them and they go great with a pint of real ale. Well salads and other edibles also.

British pub pickled eggs

Ingredients

* 12 hard-boiled eggs (see our section on how to boil an egg)
* 4 cups of malt vinegar
* 1 finely chopped chilli pepper
* 10 black peppercorns
* 10 whole cloves
* 3 cinnamon sticks
* 2 tsp of allspice

Method

1. Peel the hard-boiled eggs, allow them to cool and then place them in a large clean jar.
2. Heat the vinegar and the spices in a saucepan until the liquid begins to boil. Reduce the heat and simmer for 10 minutes.
3. Remove from the heat and allow to cool to about room temperature.
4. Strain the liquid and pour over the eggs covering them completely.
5. Seal the jar tightly with the lid and store in a cool and dark place for a minimum of two weeks before consuming.
